Get back on Track

If you have gotten off track don't worry today is a good day to get back in there. I know after the three day weekend some of us have fallen off. A piece of cake or a candy bar, well it tasted really good but it is time to jump back and start eating right. Yesterday I went to Safeway and got some fruit that was on sale. That is a good thing to do, when you see something really cheap put a little money away during the month so you can take advantage of the sale. We all know how hard it is right now, I have to count every penny. That is one reason I always buy an 18 count eggs, at the beginning of the month. I love egg sandwiches, I use just the egg whites and maybe 1/2 egg yoke for color, I add celery, onions, even some tuna. I make a big batch on Monday so then when I am hungry during the week I don't have to think about it. It is right there waiting for me. If I have to stop and try to finger out what is good for me and can't find something that is low cal of course I start eating the wrong things.

Here is a nice recipe for a dinner, these are all one portion sizes.

Chicken Florentine with brown rice

1 cup fresh mushrooms
3 oz. chicken breast
1/4 cup white wine
1 tsp. Worcestershire sauce
1 tbsp. fresh lemon juice
1/4 tsp. black pepper
1 cup steamed spinach
2/3 tbsp. oil
1/4 cup chopped onion
directions:
preheat oven to 350, rinse and slice mushroom, set aside
rinse and pat dry chicken breast. Place chicken breast in baking dish, mix wine with Worcestershire sauce and lemon juice and pour over chicken. Sprinkle with spices and bake 15 minutes or until chicken is no longer pink inside and juices run clear. Reserve the juices. In a medium skillet, heat oil, saute mushrooms and onions until translucent. Spread spinach on place; top with chicken, mushrooms, onions. Pour juice from chicken over everything.
